  • 4 cups Watermelon cubed
  • 1 cup Feta cheese crumbled
  • 1/4 cup Fresh mint chopped
  • 1/4 cup Red onion thinly sliced (optional)
  • 2 tbsp Lime juice
  • 1 tbsp Olive oil
  • Salt to taste
  • Black pepper to taste

Preparation
  1. In a large bowl, combine the cubed watermelon, crumbled feta cheese, chopped fresh mint, and thinly sliced red onion (if using).
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper to create the dressing.
  3. Pour the dressing over the watermelon mixture and gently toss to combine all ingredients. Serve immediately or chill for a refreshing treat.

Notes

For an extra touch, you can add a drizzle of balsamic glaze just before serving. This salad is best enjoyed fresh. If making ahead, store the dressing separately and combine just before serving to prevent the watermelon from becoming soggy.
