  • 28 oz canned diced tomatoes
  • 4 cups vegetable broth
  • 1/2 cup fresh basil leaves
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsps olive oil
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  2. Add diced tomatoes, vegetable broth, sugar, salt, and pepper to the pot. Bring the mixture to a simmer, then reduce heat and let it cook for about 20 minutes, allowing the flavors to meld.
  3. Remove the pot from the heat and stir in the fresh basil leaves. Use an immersion blender to carefully blend the soup until smooth, or transfer it in batches to a regular blender and blend until creamy. Serve hot.

Notes

For an extra creamy soup, stir in a splash of heavy cream or a dollop of Greek yogurt after blending. Adjust seasonings to taste. This soup pairs wonderfully with a grilled cheese sandwich or crusty bread.
