  • 16 oz Cremini mushrooms or white button mushrooms, medium size
  • 1/2 cup Plain breadcrumbs
  • 1/4 cup Parmesan cheese grated
  • 2 cloves Garlic minced
  • 2 tbsp Fresh parsley chopped
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper or cooking spray.
  2. Gently clean the mushrooms, then carefully remove the stems; finely chop the mushroom stems for the filling.
  3. In a bowl, combine the chopped mushroom stems with breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, 1 tablespoon of olive oil, salt, and pepper, mixing well to create the stuffing.
Stuffing & Baking
  1. Carefully spoon the prepared filling into each mushroom cap, mounding it slightly.
  2. Arrange the stuffed mushrooms on the baking sheet and drizzle with the remaining 1 tablespoon of olive oil.
  3. Bake for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the stuffing or a splash of white wine while mixing.
