Ingredients
  

For the Shrimp
  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • 0.125 tsp black pepper
For the Salsa
  • 1 cup diced tomatoes
  • 0.25 cup diced red onion
  • 0.25 cup chopped cilantro
  • 1 tbsp lime juice
For the Creamy Sauce
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tbsp lime juice
  • 0.5 tsp chipotle powder
For Assembly
  • 8 corn or flour tortillas
  • 2 cups shredded cabbage

Method
 

Prepare the Shrimp
  1. In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Ensure the shrimp are evenly coated with the seasonings.
Make the Salsa
  1. In a small bowl, combine the diced tomatoes, red onion, cilantro, and lime juice. Stir well and set aside.
Prepare the Creamy Sauce
  1. In another small bowl, whisk together the mayonnaise, sour cream, lime juice, and chipotle powder until smooth. Set aside.
Cook the Shrimp
  1. Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
Assemble the Tacos
  1. Warm the tortillas according to package instructions. Fill each tortilla with shredded cabbage, cooked shrimp, a spoonful of salsa, and a drizzle of creamy sauce. Serve immediately.
