Roast the Corn
- Preheat your oven to 400°F (200°C) and spread the corn kernels in a single layer on a baking sheet. Roast for 15-20 minutes, or until lightly browned and tender, then set aside to cool.
Make the Croutons
- While the corn roasts, toss the bread cubes with olive oil and garlic powder. Spread them on a baking sheet and bake for 8-10 minutes, or until golden and crispy.
Prepare the Dressing
- In a small bowl, whisk together the mayonnaise, lemon juice, and Dijon mustard until smooth. Season with salt and pepper to taste.
Assemble the Salad
- In a large bowl, combine the chopped romaine lettuce, roasted corn, halved cherry tomatoes, and shaved Parmesan cheese. Pour the dressing over the salad and toss gently to coat.
Serve
- Top with the homemade croutons and serve immediately. Enjoy your delicious Roasted Corn Caesar Salad!
Notes
For an extra smoky flavor, you can grill the corn instead of roasting it. You can also add grilled chicken for a more substantial meal.
