  • 2 cups diced potatoes
  • 1 28-ounce can canned diced tomatoes
  • 6 cups vegetable broth
  • 1 medium chopped onion
  • 2 garlic cloves, minced
Seasoning (Optional)
  • salt to taste
  • black pepper to taste
  • 1 teaspoon dried thyme

Method
 

Preparation
  1. Sauté the chopped onion and minced garlic in a large pot with a little olive oil until softened, about 3-5 minutes.
  2. Add the diced carrots, chopped celery, and diced potatoes to the pot; cook for 5 minutes, stirring occasionally.
Cooking
  1. Pour in the canned diced tomatoes and vegetable broth.
  2. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  3. Season with salt, black pepper, and dried thyme to taste; stir well to combine.
