  • 2 1/2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
Cream Cheese Frosting
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Cake
  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round baking pans by greasing and flouring them.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate bowl, combine the wet ingredients: buttermilk, vegetable oil, eggs, red food coloring, vanilla extract, and white vinegar.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Cream Cheese Frosting
  1. In a large bowl, beat the softened cream cheese and butter with an electric mixer until light and fluffy.
  2. Gradually add the powdered sugar, one cup at a time, mixing until smooth.
  3. Stir in the vanilla extract until fully combined.
Assembly
  1. Once the cakes are completely cool, spread a layer of cream cheese frosting over the top of one cake layer.
  2. Place the second cake layer on top and cover the entire cake with the remaining frosting.

Notes

For best results, make sure your cream cheese and butter are at room temperature for the frosting. You can adjust the amount of red food coloring to achieve your desired shade of red. This cake can be stored in an airtight container in the refrigerator for up to 3 days.
