  • 2 tbsp butter
  • 2 tbsp all-purpose flour

  • 0.25 tsp black pepper or to taste

  • 2 tbsp bacon bits
  • 2 tbsp shredded cheddar cheese
  • 1 tbsp fresh chives chopped

Cooking Steps
  1. In a large pot, melt the butter over medium heat. Add the diced potatoes and cook for 5 minutes, stirring occasionally, until slightly softened.
  2. Sprinkle the flour over the potatoes and stir for 1 minute until well combined.
  3. Gradually whisk in the chicken broth, then add the milk. Bring the mixture to a simmer, stirring constantly.
  4. Reduce heat to low and cook for 10-12 minutes, or until potatoes are tender.
  5. Remove from heat and stir in the heavy cream, salt, and pepper.
  6. For a smoother soup, use an immersion blender to blend a portion of the soup to your desired consistency. Serve hot and garnish with bacon bits, cheddar cheese, and chives, if desired.

Notes

For a vegetarian option, use vegetable broth instead of chicken broth. This soup can be stored in an airtight container in the refrigerator for up to 3 days.
