  • 1 head Cauliflower riced
  • 2 large Eggs
  • 2 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1 cup Mixed Vegetables frozen, thawed
  • 2 cloves Garlic minced
  • 1 tsp Ginger grated

Method
 

Preparation
  1. Rice the cauliflower by grating it or pulsing in a food processor until it resembles rice.
  2. Prepare the eggs by whisking them in a small bowl.
Cooking
  1. Heat a large pan or wok over medium-high heat with a little oil, then scramble the eggs and set them aside.
  2. Add the garlic and ginger to the pan and stir-fry for 30 seconds until fragrant.
  3. Add the riced cauliflower and mixed vegetables to the pan, stir-fry for 5-7 minutes until the cauliflower is tender-crisp.
  4. Stir in the scrambled eggs, soy sauce, and sesame oil, and cook for another 1-2 minutes until everything is well combined and heated through.

  1. Serve the cauliflower fried rice immediately, garnished with green onions if desired.
