Preparation
  1. Season the chicken breasts with salt and pepper, then dredge them lightly in flour, shaking off any excess.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat. Cook the floured chicken for 2-3 minutes per side until golden brown and cooked through; remove from skillet and set aside.
  2. Deglaze the pan by pouring in chicken broth and lemon juice, scraping up any browned bits from the bottom. Stir in the capers and return the chicken to the skillet to warm through, adding butter if desired.
  3. Garnish with fresh parsley before serving.
