Ingredients

  • 1 count whole turkey about 12-14 pounds
  • 1/2 cup butter, softened
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 medium onions, quartered
  • 3 medium carrots, roughly chopped
  • 2 medium celery stalks, roughly chopped
  • 2 cups chicken broth

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). In a small bowl, combine softened butter with rosemary, thyme, minced garlic, salt, and pepper.
  2. Remove giblets and neck from the turkey, then pat it dry with paper towels. Rub the herb butter mixture all over the turkey, including under the skin.
  3. Place quartered onions, chopped carrots, and celery stalks into the turkey cavity. Place the turkey in a large roasting pan and pour chicken broth into the bottom of the pan.
Roasting
  1. Roast for 1.5 to 2 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C). Baste the turkey every 30 minutes with the pan juices to keep it moist.
Resting and Serving
  1. Once cooked, remove the turkey from the oven and transfer it to a large cutting board. Tent it loosely with foil and let it rest for 15-20 minutes before carving.

Notes

For extra crispy skin, increase the oven temperature to 425°F (220°C) for the last 15-20 minutes of roasting. Always ensure the internal temperature reaches 165°F (74°C) for food safety.
