Preparation
- Preheat oven to 375°F (190°C). In a small bowl, combine softened butter with rosemary, thyme, minced garlic, salt, and pepper.
- Remove giblets and neck from the turkey, then pat it dry with paper towels. Rub the herb butter mixture all over the turkey, including under the skin.
- Place quartered onions, chopped carrots, and celery stalks into the turkey cavity. Place the turkey in a large roasting pan and pour chicken broth into the bottom of the pan.
Roasting
- Roast for 1.5 to 2 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C). Baste the turkey every 30 minutes with the pan juices to keep it moist.
Resting and Serving
- Once cooked, remove the turkey from the oven and transfer it to a large cutting board. Tent it loosely with foil and let it rest for 15-20 minutes before carving.
Notes
For extra crispy skin, increase the oven temperature to 425°F (220°C) for the last 15-20 minutes of roasting. Always ensure the internal temperature reaches 165°F (74°C) for food safety.
