Preparation
- Wash, peel, and cut the potatoes into 1-inch cubes. Place them in a large pot and cover with cold, salted water.
- Bring the water to a boil, then reduce heat and simmer until the potatoes are tender when pierced with a fork, about 15-20 minutes. Drain the potatoes and let them cool slightly.
Assembly
- While potatoes are cooking, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper in a large bowl. Whisk until smooth.
- Add the slightly cooled potatoes, diced celery, finely chopped red onion, and fresh dill to the bowl with the dressing. Gently fold everything together until well combined.
- Taste and adjust seasoning as needed. For best results, cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
For an extra pop of flavor, consider adding a pinch of smoked paprika or a dash of hot sauce to the dressing. You can also garnish with extra fresh dill or chopped chives before serving.
