Ingredients

  • 1 kg potatoes floury, like Russet or Maris Piper
  • 250 g flour all-purpose
  • 1 egg large
  • 1 tsp salt

Method
 

Preparation
  1. Boil the potatoes in their skins until very tender, then peel and mash them while still hot until smooth.
  2. On a clean surface, combine the mashed potatoes with the flour, egg, and salt, mixing gently until a soft dough forms.
  3. Divide the dough into several portions and roll each into a long rope, about 1.5-2 cm thick.
  4. Cut the ropes into small, 2-3 cm pieces, and if desired, gently roll each piece against the tines of a fork to create ridges.
Cooking
  1. Bring a large pot of salted water to a rolling boil.
  2. Carefully drop the gnocchi into the boiling water in batches, ensuring not to overcrowd the pot.
  3. Cook for 2-3 minutes, or until the gnocchi float to the surface and are plump and tender.
  4. Remove the cooked gnocchi with a slotted spoon and serve immediately with your favorite sauce.

Notes

For best results, use freshly mashed potatoes and avoid overworking the dough to keep the gnocchi light and tender.
