Preparation
- Boil the potatoes in their skins until very tender, then peel and mash them while still hot until smooth.
- On a clean surface, combine the mashed potatoes with the flour, egg, and salt, mixing gently until a soft dough forms.
- Divide the dough into several portions and roll each into a long rope, about 1.5-2 cm thick.
- Cut the ropes into small, 2-3 cm pieces, and if desired, gently roll each piece against the tines of a fork to create ridges.
Cooking
- Bring a large pot of salted water to a rolling boil.
- Carefully drop the gnocchi into the boiling water in batches, ensuring not to overcrowd the pot.
- Cook for 2-3 minutes, or until the gnocchi float to the surface and are plump and tender.
- Remove the cooked gnocchi with a slotted spoon and serve immediately with your favorite sauce.
Notes
For best results, use freshly mashed potatoes and avoid overworking the dough to keep the gnocchi light and tender.
