Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
Making the Dough
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
- Stir in the oats and raisins until evenly distributed throughout the dough.
Baking
- Drop rounded tablespoons of cookie dough onto the prepared baking sheets, leaving some space between each cookie.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are set but still slightly soft.
- Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra chewiness, underbake slightly. You can also add a pinch of nutmeg for a deeper spice flavor. Store cookies in an airtight container at room temperature for up to 3-4 days or freeze for up to 3 months.
