  • 2 lbs potatoes Russet or Yukon Gold recommended
  • 1/2 cup milk warm
  • 4 tbsp butter unsalted
  • 1 tsp salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. Peel and quarter the potatoes, then place them in a large pot and cover with cold salted water.
  2. Bring the water to a boil and cook the potatoes until they are very tender, about 15-20 minutes, then drain thoroughly.
Mashing
  1. Return the drained potatoes to the hot pot and add butter, warm milk, salt, and pepper.
  2. Mash the potatoes with a potato masher until smooth and creamy, avoiding over-mashing.
