Preparation
- Whisk the eggs in a small bowl with a pinch of salt and pepper; set aside.
- Prepare all other ingredients by having them chopped and measured, ready to go, as fried rice cooks quickly.
Cooking
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Pour in the whisked eggs and scramble them until fully cooked, then remove them from the skillet and set aside.
- Add the day-old cooked rice to the skillet, breaking up any clumps with a spoon, and stir-fry for 2-3 minutes.
- Add the frozen peas and carrots to the rice, continuing to stir-fry for another 2-3 minutes until heated through.
- Return the scrambled eggs to the skillet with the rice and vegetables, then pour in the soy sauce and sesame oil.
- Stir everything together thoroughly, ensuring all ingredients are well combined and coated with the sauces.
- Taste the fried rice and adjust seasoning with additional salt, pepper, or soy sauce as needed.
Serving
- Garnish with chopped green onions before serving warm.
Notes
For best results, use cold, day-old rice as it is drier and prevents the fried rice from becoming mushy. Feel free to add other vegetables like corn, bell peppers, or onions, or a protein like cooked chicken or shrimp for a more substantial meal. Adjust the amount of soy sauce to your preference and dietary needs.
