Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.
- In a separate bowl, whisk together the eggs, vegetable oil, and vanilla extract. Add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the grated carrots and chopped nuts. Pour the batter into the prepared baking pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
- For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until light and fluffy.
- Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
Notes
For extra moisture, add 1/2 cup of unsweetened applesauce to the batter. You can also add raisins or shredded coconut for additional flavor and texture.
