Ingredients

Pancake Batter
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 0.5 teaspoon salt
  • 1.25 cups milk
  • 1 egg large
  • 2 tablespoons vegetable oil

Equipment

  • Large bowl
  • Whisk
  • Griddle or frying pan

Method

Preparation
  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In a separate bowl, whisk together the milk, egg, and vegetable oil.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix, as lumps are fine.
Cooking
  1. Heat a lightly oiled griddle or frying pan over medium heat.
  2. Pour about 1/4 cup of batter per pancake onto the hot surface.
  3. Cook for 2-3 minutes per side, or until golden brown and cooked through.

Notes

For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking. Serve with your favorite toppings like syrup, fruit, or whipped cream.
