  • 1/4 cup melted butter
Filling
  • 14 oz. sweetened condensed milk
  • 1/2 cup Key lime juice
  • 3 egg yolks

  • lime zest for garnish

  • 2 tbsp water if needed for crust

Method
 

Make the Crust
  1. Preheat your oven to 350°F (175°C) and combine graham cracker crumbs, sugar, and melted butter in a bowl.
  2. Press the mixture evenly into a 9-inch pie dish and bake for 10 minutes until lightly golden, then let it cool.
Prepare the Filling
  1. In a medium bowl, whisk together sweetened condensed milk, Key lime juice, and egg yolks until smooth.
  2. Pour the filling into the cooled crust and bake for 15-20 minutes, or until the edges are set but the center still jiggles slightly.
Chill and Serve
  1. Allow the pie to cool completely at room temperature, then refrigerate for at least 2-4 hours before serving.
  2. Garnish with whipped cream and lime zest, if desired, and enjoy your quick Key Lime Pie!

Notes

For best results, use fresh Key lime juice. If Key limes are unavailable, regular lime juice can be used, but the flavor will be slightly different. Ensure the pie is thoroughly chilled for a firm set.
