Frosting
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2-3 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract
  • a few drops food coloring (optional)

Method
 

Cookies
  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, and salt in a medium bowl, then set aside.
  3. In a large bowl, cream together butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
  6. Roll the dough out on a lightly floured surface to about 1/4-inch thickness, then cut into desired shapes using cookie cutters.
  7. Place cookies on the prepared baking sheets and bake for 8-10 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Frosting
  1. In a medium bowl, beat softened butter until creamy.
  2. Gradually add powdered sugar, milk or cream, and vanilla extract, beating until smooth and fluffy.
  3. If desired, add a few drops of food coloring and mix until fully incorporated.
  4. Once cookies are completely cool, spread or pipe the frosting onto them.

Notes

For extra flavor, you can add a pinch of nutmeg or almond extract to the cookie dough or frosting. Get creative with cookie cutters for different occasions!
