Equipment

  • 9x13 inch baking dish
  • large bowl
  • separate bowl
  • whisk

Method

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a large bowl, combine the sliced peaches with sugar, cornstarch, lemon juice, and cinnamon.
  3. Toss gently to coat the peaches evenly and then pour the mixture into the prepared baking dish.
Making the Topping
  1. In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Pour in the milk and melted butter, stirring until just combined to form a soft dough.
  3. Drop spoonfuls of the dough over the peach filling, spreading it out as evenly as possible.
Baking
  1. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
  2. Allow the cobbler to cool slightly before serving, optionally with a scoop of vanilla ice cream.

Notes

For extra flavor, add a pinch of nutmeg to the peach filling. If using frozen peaches, do not thaw them before mixing with other ingredients; they will release moisture as they bake. You can also add a teaspoon of vanilla extract to the topping mixture for an enhanced aroma.
