Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  2. In a large bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
Mixing and Baking
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a thick batter forms. Chill the dough in the refrigerator for 10-15 minutes.
  2. Place powdered sugar in a shallow bowl. Roll chilled dough into 1-inch balls, then generously coat each ball in powdered sugar.
  3. Place cookies 2 inches apart on prepared baking sheets and bake for 9-11 minutes, or until edges are set but centers are still slightly soft. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, you can add a pinch of cinnamon to the dry ingredients. These cookies are best stored in an airtight container at room temperature for up to 3-4 days.
