  • 4 boneless, skinless chicken breasts
  • 2 cups marinara sauce
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 1 cup Italian breadcrumbs
  • 1 egg beaten
  • 0.5 cup all-purpose flour
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Pound the chicken breasts to an even thickness of about 1/2 inch, then season both sides with salt and pepper.
Dredging and Frying
  1. Set up a dredging station with three shallow dishes: one for flour, one for beaten egg, and one for breadcrumbs.
  2. Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with breadcrumbs.
  3. Heat olive oil in a large skillet over medium-high heat, then pan-fry the breaded chicken for 3-4 minutes per side until golden brown.
Baking
  1. Transfer the seared chicken to the prepared baking dish and spoon marinara sauce over each piece.
  2. Top with shredded mozzarella and grated Parmesan cheese, then bake for 15-20 minutes until the cheese is melted and bubbly and the chicken is cooked through.
Serving
  1. Remove from oven and let stand for a few minutes before serving hot, optionally garnished with fresh basil or parsley.

Notes

Serve with your favorite pasta or a side salad for a complete meal. You can also add a pinch of red pepper flakes to the marinara sauce for a bit of heat.
