  • 2 medium chicken breast cooked and shredded
  • 6 cups chicken broth
  • 3 ounces egg noodles
  • 1 cup carrots chopped
  • 1/2 cup celery chopped
  • 1/4 cup onion chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat, then add chopped carrots, celery, and onion and sauté until softened, about 5-7 minutes.
Cooking
  1. Pour in the chicken broth, bring to a boil, then add egg noodles and cook for 7-10 minutes or until al dente.
  2. Stir in shredded chicken, salt, and pepper, heating through for a few minutes.
Serving
  1. Ladle the soup into bowls and garnish with fresh parsley before serving warm.

Notes

For extra flavor, you can add a bay leaf to the broth while it simmers and remove it before serving. Feel free to adjust seasoning to taste.
