- In a small bowl, whisk together soy sauce and sesame oil; set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through; remove from skillet and set aside.
- Add remaining 1 tablespoon of vegetable oil to the skillet. Pour in beaten eggs and scramble until just set; remove from skillet and chop into small pieces.
- Add minced garlic and grated ginger to the skillet and stir-fry for 30 seconds until fragrant.
- Add the frozen peas and carrots to the skillet and cook for 2-3 minutes until tender-crisp.
- Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for 3-4 minutes, ensuring the rice is heated through.
- Return the cooked chicken and scrambled eggs to the skillet. Pour the soy sauce mixture over the rice and stir everything together until well combined and heated through.
- Garnish with sliced green onions and serve immediately.
Notes
For best results, use day-old rice as it tends to be drier and less sticky. Feel free to add other vegetables like corn, bell peppers, or onions. Adjust soy sauce to taste.
