Chickpea Salad
  • 15 ounces canned chickpeas rinsed and drained
  • 1 celery stalk finely chopped
  • 0.25 cup red onion finely chopped
  • 0.25 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh dill chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup chickpea sprouts optional, for garnish

Preparation
  1. Mash the rinsed and drained chickpeas in a medium bowl using a fork or potato masher, leaving some whole for texture.
  2. Add the finely chopped celery and red onion to the mashed chickpeas.
  3. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, chopped fresh dill, salt, and black pepper.
  4. Pour the dressing over the chickpea mixture and stir until everything is well combined.
  5. Taste and adjust seasonings as needed, then serve immediately or chill for later. Garnish with chickpea sprouts if desired.

Notes

For growing chickpea sprouts: Soak dry chickpeas overnight, then drain and rinse. Place them in a sprouting jar or colander, rinsing twice daily until tails appear (2-4 days). Store sprouts in the refrigerator for up to 5 days.
