Preparation
- Mash the rinsed and drained chickpeas in a medium bowl using a fork or potato masher, leaving some whole for texture.
- Add the finely chopped celery and red onion to the mashed chickpeas.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, chopped fresh dill, salt, and black pepper.
- Pour the dressing over the chickpea mixture and stir until everything is well combined.
- Taste and adjust seasonings as needed, then serve immediately or chill for later. Garnish with chickpea sprouts if desired.
Notes
For growing chickpea sprouts: Soak dry chickpeas overnight, then drain and rinse. Place them in a sprouting jar or colander, rinsing twice daily until tails appear (2-4 days). Store sprouts in the refrigerator for up to 5 days.
