Preparation
- Combine all marinade ingredients in a bowl and whisk well. Place the skirt steak in a shallow dish or a resealable bag, then pour the marinade over the steak, ensuring it's fully coated.
- Marinate for at least 15 minutes at room temperature, or refrigerate for up to 2 hours for deeper flavor (optional).
Cooking
- Preheat a grill or a heavy-bottomed pan over medium-high heat. Once hot, remove the steak from the marinade, shaking off any excess.
- Cook the steak for 3-5 minutes per side for medium-rare, or longer to desired doneness.
Finishing
- Remove the steak from the grill or pan and let it rest for 5 minutes before slicing. Slice against the grain into thin strips and serve immediately.
Notes
For extra flavor, a pinch of smoked paprika can be added to the marinade. Adjust cooking time based on desired doneness. Serve with warm tortillas, salsa, and guacamole for a complete meal.
