Method
Make the Mash
- Boil potatoes in salted water until tender, then drain thoroughly.
- Mash potatoes with butter and milk, seasoning to taste.
- Preheat oven to 200°C (gas mark 6).
Make the Base
- Heat olive oil in an ovenproof pan and sauté onions, carrots, and celery for 5-7 minutes.
- Add garlic and cook for another minute until fragrant.
- Brown the ground beef, breaking it up with a spoon, and drain any excess fat.
- Stir in beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Bring to a simmer and cook for 10-15 minutes until the sauce thickens.
- Stir in the frozen peas.
Combine
- Spread the mashed potatoes evenly over the beef filling.
- Fluff the potato topping with a fork and bake for 20-25 minutes until golden brown and bubbly.
Notes
For an extra golden crust, you can sprinkle some cheese over the mashed potatoes before baking.
