For the Rice
  • 1 cup cooked white rice
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro chopped
For the Toppings
  • 0.5 cup black beans canned, rinsed
  • 0.5 cup corn fresh or frozen
  • 0.25 cup salsa
  • 2 tbsp sour cream
  • 0.5 avocado sliced or diced

Method
 

Chicken Preparation
  1. Slice the chicken breast into thin strips or cube it into bite-sized pieces.

  3. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until fully cooked through and slightly browned. Set aside.
Rice Preparation
  1. In a separate bowl, combine the cooked white rice with lime juice and chopped fresh cilantro. Mix well.
Assemble the Bowl
  1. In a large serving bowl, start with a base of the lime cilantro rice.
  2. Arrange the cooked chicken, black beans, and corn next to the rice in separate sections.
  3. Top with a generous spoonful of salsa, a dollop of sour cream, and slices or diced avocado.
