Preparation
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg, then stir in the pumpkin puree and vanilla extract until well combined.
Baking
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
Cooling
- Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For an extra touch, you can add a cream cheese frosting once the cookies have cooled completely. These cookies are best stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
