  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 large egg
  • 0.5 cups milk
  • 0.25 cups vegetable oil
  • 1 cup fresh or frozen blueberries

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the egg, milk, and vegetable oil.
Mixing and Baking
  1. Pour the wet ingredients into the dry ingredients and stir until just combined; be careful not to overmix, and gently fold in the blueberries.
  2. Divide the batter evenly among the 7 muffin cups, filling each about two-thirds full.
  3. Bake for 18-22 minutes, or until a wooden skewer inserted into a muffin comes out clean.
Cooling
  1. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a little granulated sugar on top of the muffins before baking. If using frozen blueberries, do not thaw them before adding to the batter.
