  • 2 medium potatoes peeled and diced
  • 1 medium zucchini diced
  • 1 28-ounce can canned diced tomatoes undrained
Liquids & Seasonings
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
Finishing Touches
  • 1 15-ounce can canned cannellini beans rinsed and drained
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Preparation
  1. Heat olive oil in a large pot or Dutch oven over medium heat, then add chopped carrots, celery, and onion, sautéing until softened, about 5-7 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add diced potatoes, zucchini, canned diced tomatoes (undrained), vegetable broth, dried thyme, dried rosemary, and the bay leaf to the pot.
  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
Finishing the Stew
  1. Stir in the rinsed and drained cannellini beans, cooking for an additional 5 minutes to heat them through.
  2. Remove the bay leaf, then season the stew with salt and black pepper to taste.
  3. Ladle the hot stew into bowls and garnish with fresh chopped parsley before serving.

Notes
