Preparation
- Heat olive oil in a large pot or Dutch oven over medium heat, then add chopped carrots, celery, and onion, sautéing until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add diced potatoes, zucchini, canned diced tomatoes (undrained), vegetable broth, dried thyme, dried rosemary, and the bay leaf to the pot.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
Finishing the Stew
- Stir in the rinsed and drained cannellini beans, cooking for an additional 5 minutes to heat them through.
- Remove the bay leaf, then season the stew with salt and black pepper to taste.
- Ladle the hot stew into bowls and garnish with fresh chopped parsley before serving.
Notes
