- Rinse quinoa thoroughly with cold water in a fine-mesh sieve.
- Combine quinoa, water, and salt in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all water is absorbed.
- Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and set aside to cool slightly.
Mediterranean Quinoa Bowl Assembly
- In a bowl, combine a portion of the cooked quinoa with chickpeas, halved cherry tomatoes, diced cucumber, crumbled feta cheese, and Kalamata olives.
- Whisk together lemon juice and olive oil, then drizzle over the quinoa bowl. Garnish with fresh parsley.
Southwestern Quinoa Bowl Assembly
- In a bowl, combine a portion of the cooked quinoa with rinsed black beans, corn kernels, diced avocado, and thinly sliced red onion.
