  • 2 cups canned corn, drained and rinsed
  • 1.5 cups canned black beans, drained and rinsed
  • 0.5 small red onion, finely diced
  • 1 medium red bell pepper, diced
  • 0.25 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Cucumber and Dill Yogurt Dip
  • 1 cup plain Greek yogurt
  • 0.5 medium cucumber, grated and squeezed dry
  • 2 tbsp fresh dill, chopped
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 0.25 tsp salt
  • 0.125 tsp black pepper
Watermelon and Feta Salad
  • 4 cups seedless watermelon, cubed
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup fresh mint, chopped
  • 2 tbsp balsamic glaze

Method
 

Corn and Black Bean Salad
  1. Combine corn, black beans, red onion, red bell pepper, and cilantro in a large bowl. In a separate small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  2. Pour the dressing over the corn and black bean mixture, then toss gently to combine. Cover the salad and refrigerate for at least 15 minutes before serving.
Cucumber and Dill Yogurt Dip
  1. In a medium bowl, combine the Greek yogurt, grated cucumber, fresh dill, minced garlic, lemon juice, salt, and black pepper. Stir until all ingredients are well combined.
  2. Taste and adjust seasonings as desired, then cover and refrigerate for at least 10 minutes to allow the flavors to meld.
Watermelon and Feta Salad
  1. Gently combine the cubed watermelon, crumbled feta cheese, and chopped fresh mint in a large bowl. Drizzle the balsamic glaze evenly over the salad.
