  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract

  • ¼ cup granulated sugar
  • 25 chocolate kisses, unwrapped

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the peanut butter, egg, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
  6. Place ¼ cup of granulated sugar in a small bowl for rolling.
Baking
  1. Roll the dough into 1-inch balls, then roll each ball in the granulated sugar to coat evenly.
  2. Place the sugared dough balls about 2 inches apart on the prepared baking sheets.
  3. Bake for 8-10 minutes, or until the edges are lightly golden and the centers are still soft.
  4. Immediately after removing from the oven, press one chocolate kiss into the center of each warm cookie.
  5. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, make sure your butter is at room temperature. Do not overbake the cookies, as they will continue to set as they cool. You can substitute milk chocolate kisses with dark chocolate or white chocolate kisses for a variation.
