Preparation
  1. Pat the turkey tenderloins dry with paper towels to ensure a good sear. In a small bowl, combine salt, black pepper, garlic powder, and smoked paprika, then rub this seasoning mixture evenly over all sides of the turkey tenderloins.
Sear the Turkey
  1. Heat the olive oil in a large skillet over medium-high heat until it shimmers. Carefully place the seasoned turkey tenderloins into the hot skillet and sear for 7-8 minutes per side, or until a golden-brown crust forms and the internal temperature reaches 165°F (74°C) using an instant-read thermometer.
Rest and Serve
  1. Remove the turkey from the skillet and transfer it to a cutting board. Tent loosely with foil and let it rest for 5-10 minutes to allow the juices to redistribute. Slice against the grain into 1/2-inch thick medallions and serve immediately.
