  • 15 ounces pure pumpkin puree
  • 0.75 cup granulated sugar
  • 0.25 cup packed light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground allspice
  • 2 large eggs lightly beaten
  • 1 cup heavy cream
  • 0.5 cup milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and place the pie crust in a 9-inch pie dish, crimping the edges as desired.
  2. In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, flour, cinnamon, nutmeg, ginger, cloves, and allspice until well combined.
  3. In a separate bowl, whisk together the eggs, heavy cream, milk, and vanilla extract; then, gradually add this mixture to the pumpkin mixture, stirring until smooth.
Baking
  1. Pour the pumpkin filling into the prepared pie crust and bake for 15 minutes at 400°F (200°C).
  2. Reduce the oven temperature to 350°F (175°C) and continue baking for another 35-45 minutes, or until the center is set and a knife inserted near the center comes out clean.
Cooling and Serving
  1. Allow the pie to cool completely on a wire rack for at least 2-3 hours before slicing and serving. This ensures the filling sets properly.

Notes

For best results, prepare the pie the day before serving to allow adequate chilling time, which further enhances the flavor and texture. You can serve it with a dollop of whipped cream or a sprinkle of extra cinnamon.
