Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract.
Baking
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Transfer the batter to the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the pumpkin bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For extra flavor, you can add 1/2 cup of chocolate chips or chopped nuts to the batter. This bread freezes well; wrap it tightly in plastic wrap and then foil before freezing for up to 3 months.
