- Heat vegetable oil in a large skillet or griddle over medium-high heat. Add the sliced onions and bell peppers (if using) and cook until softened and caramelized, about 5-7 minutes. Remove from the skillet and set aside.
- Add the thinly sliced beef to the same skillet. Cook, stirring frequently, until browned and cooked through, about 3-5 minutes. Season with salt and pepper.
- Return the cooked onions and peppers to the skillet with the beef. Mix well.
- Divide the meat and vegetable mixture into two portions in the skillet. Place 3 slices of provolone cheese over each portion. Cover the skillet for a minute or two to allow the cheese to melt.
- Carefully scoop each portion of the cheesy meat mixture into a hoagie roll. Serve immediately.
Notes
For an authentic Philly experience, use Cheez Whiz instead of provolone. You can also toast the hoagie rolls before filling them for extra crunch.
