  • 1 pack Tomato seeds
  • 1 pack Basil seeds
  • 1 bag Potting soil

For the Soup
  • 2 lbs Fresh tomatoes from your garden
  • 1 cup Fresh basil packed, from your garden
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Heavy cream optional

Method
 

Planting and Growing
  1. Sow tomato and basil seeds in separate pots filled with potting soil, following package directions for depth and spacing.
  2. Place the pots in a sunny location and water regularly, ensuring the soil remains consistently moist but not waterlogged.
  3. Once seedlings emerge and are large enough to handle, thin them to the strongest plant per pot.
  4. Continue to water and fertilize your plants as they grow, providing stakes or cages for tomatoes as needed for support.
Making the Soup
  1. Harvest your ripe tomatoes and fresh basil from your garden.
  2. In a large pot, heat olive oil over medium heat, then add chopped onion and sauté until softened and translucent, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chopped fresh tomatoes, vegetable broth, salt, and black pepper to the pot.
  5. Bring the mixture to a simmer, then reduce heat and cook, covered, for 20-25 minutes, or until tomatoes are very soft.
  6. Remove the pot from heat and stir in the fresh basil leaves.
  7. Carefully blend the soup using an immersion blender until smooth, or transfer to a regular blender in batches.
  8. If desired, stir in heavy cream for a richer soup, then taste and adjust seasonings as needed.

Notes

For an even deeper tomato flavor, you can roast your fresh tomatoes before adding them to the soup. If you don't have an immersion blender, carefully transfer the soup to a regular blender to blend until smooth. Be sure to vent the blender lid to release steam.
