Preparation
- In a large pot or Dutch oven, heat olive oil over medium heat. Sauté chopped onion until softened, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in cumin, chili powder, oregano, salt, and black pepper. Cook for 1 minute, allowing the spices to become fragrant.
Cooking the Chili
- Pour in the chicken broth, then add the shredded cooked chicken, drained great northern beans, and undrained diced green chilies.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 20 minutes to allow flavors to meld. Stir occasionally.
- If desired, stir in 1/2 cup heavy cream for a creamier chili, and heat through for a few minutes.
Serving
- Ladle the white chicken chili into bowls. Garnish with your favorite toppings such as shredded cheese, sour cream, fresh cilantro, or diced avocado.
Notes
For extra heat, add a pinch of cayenne pepper or a dash of hot sauce. This chili freezes well for future meals.
