  • 3 cups Cooked Chicken, shredded
  • 2 cans (15 oz each) Great Northern Beans, drained and rinsed
  • 4 cups Chicken Broth
  • 1 can (4 oz) Diced Green Chilies, undrained
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive Oil
Spices
  • 2 teaspoons Cumin
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Toppings (Optional)
  • Shredded Monterey Jack cheese
  • Sour cream or Greek yogurt
  • Fresh cilantro, chopped
  • Avocado, diced
Dairy (optional)
  • 1/2 cup Heavy Cream

Method
 

Preparation
  1. In a large pot or Dutch oven, heat olive oil over medium heat. Sauté chopped onion until softened, about 5-7 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in cumin, chili powder, oregano, salt, and black pepper. Cook for 1 minute, allowing the spices to become fragrant.
Cooking the Chili
  1. Pour in the chicken broth, then add the shredded cooked chicken, drained great northern beans, and undrained diced green chilies.
  2. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 20 minutes to allow flavors to meld. Stir occasionally.
  3. If desired, stir in 1/2 cup heavy cream for a creamier chili, and heat through for a few minutes.
Serving
  1. Ladle the white chicken chili into bowls. Garnish with your favorite toppings such as shredded cheese, sour cream, fresh cilantro, or diced avocado.

Notes

For extra heat, add a pinch of cayenne pepper or a dash of hot sauce. This chili freezes well for future meals.
