Noodles
  • 200 g rice noodles
Vegetables
  • 1 cucumber julienned
  • 1 carrot julienned
  • 0.5 red bell pepper thinly sliced
Dressing
  • 4 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp ginger grated
  • 1 clove garlic minced
Garnish
  • 1 tbsp sesame seeds
  • 2 tbsp fresh cilantro chopped

Method
 

Preparation
  1. Cook the rice noodles according to package directions, then drain and rinse with cold water.
  2. In a large bowl, combine the julienned cucumber, carrot, and sliced bell pepper.
Dressing
  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic.
Assembly
  1. Add the cooked and cooled noodles to the bowl with the vegetables.
  2. Pour the dressing over the noodles and vegetables, then toss to combine.

Notes
