  • 2 cups Cooked chicken, shredded or diced
  • 1/2 cup Celery, finely diced
  • 1/2 cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

  • 1/4 cup Red onion, finely diced
  • 1/2 cup Grapes, halved
  • 1/4 cup Toasted pecans or walnuts, chopped
  • 2 tablespoons Fresh dill or parsley, chopped

Preparation
  1. In a large bowl, combine the cooked chicken and diced celery.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the chicken and celery mixture; stir until all ingredients are well combined and coated.
  4. If using, gently fold in any optional add-ins such as red onion, grapes, nuts, or herbs.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld, or serve immediately.

Notes

For best results, use freshly cooked and cooled chicken. Adjust the amount of mayonnaise to your preferred creaminess. This recipe makes excellent use of leftover roasted or rotisserie chicken.
