- Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by greasing it thoroughly.
- In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon until well combined.
- In a large bowl, mash the overripe bananas, then stir in granulated sugar, brown sugar, large egg, melted unsalted butter, and vanilla extract.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined and no dry streaks remain, being careful not to overmix.
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing and serving.
Notes
For the best flavor and sweetness, use very ripe bananas with plenty of brown spots on the peel.
