  • 3 large Overripe bananas, mashed
  • 0.5 cup Granulated sugar
  • 0.25 cup Brown sugar, packed
  • 1 Large egg
  • 0.5 cup Melted unsalted butter
  • 1 tsp Vanilla extract

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by greasing it thoroughly.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon until well combined.
  3. In a large bowl, mash the overripe bananas, then stir in granulated sugar, brown sugar, large egg, melted unsalted butter, and vanilla extract.
  4. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined and no dry streaks remain, being careful not to overmix.
  5. Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing and serving.

Notes

For the best flavor and sweetness, use very ripe bananas with plenty of brown spots on the peel.
