Ingredients
  

For the Filling
  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 2 tbsp taco seasoning
  • 1/2 cup beef broth
For the Enchiladas
  • 12 corn tortillas
  • 28 oz red enchilada sauce
  • 2 cups Cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
For Garnish (Optional)
  • sour cream
  • fresh cilantro chopped
  • diced green onions

Method
 

Cooking the Filling
  1. Brown the ground beef in a large skillet over medium heat, then drain any excess fat.
  2. Add the chopped onion and minced garlic to the skillet, cooking until softened.
  3. Stir in the taco seasoning and beef broth, simmering until the liquid has mostly absorbed.
Assembling the Enchiladas
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Warm the corn tortillas to make them pliable, either in the microwave or a skillet.
  3. Dip each tortilla in the enchilada sauce to lightly coat.
  4. Fill each tortilla with a portion of the beef mixture and a sprinkle of both cheeses, then roll it up tightly.
  5. Place the rolled enchiladas seam-side down in the prepared baking dish.
  6. Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle with the rest of the shredded cheeses.
Baking and Serving
  1. Bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
  2. Let the enchiladas rest for a few minutes before serving.
  3. Garnish with sour cream, fresh cilantro, or diced green onions, if desired.

Notes

For an extra kick, add a pinch of chili powder or cayenne pepper to the beef mixture. If you prefer a milder flavor, use a mild enchilada sauce. You can also customize the cheese blend to your liking with Oaxaca or Colby Jack.
