  • 2 tbsp olive oil

  • 3 rosemary sprigs
  • 3 thyme sprigs
  • 1 lemon

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and remove the chicken from its packaging, patting it dry with paper towels.
  2. Rub the chicken all over with olive oil, then season generously with salt and black pepper.
  3. Place rosemary and thyme sprigs, along with half a lemon, inside the chicken cavity.
Roasting
  1. Place the chicken in a roasting pan and roast for 1 hour and 30 minutes, or until an internal temperature of 165°F (74°C) is reached in the thickest part of the thigh.
  2. Baste the chicken occasionally with the pan juices to keep it moist and promote even browning.
Resting and Serving
  1. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  2. Carve the chicken and serve immediately with your favorite side dishes.

Notes

For extra crispy skin, pat the chicken very dry before adding oil and seasoning. You can also add other herbs like sage or oregano for different flavor profiles.
