  • 2 small Red Potatoes diced
  • 6 cups Chicken or Vegetable Broth
  • 1 medium Onion chopped
  • 2 stalks Celery chopped
  • 3 cloves Garlic minced
  • 2 tbsp Butter
  • 2 tbsp All-Purpose Flour
  • 2 cups Milk whole
  • 1/2 cup Heavy Cream
  • 1 tsp Salt or to taste
  • 1/2 tsp Black Pepper or to taste
  • 2 tbsp Fresh Chives chopped, for garnish
  • 1/2 cup Cheddar Cheese shredded, for garnish
  • 4 slices Bacon cooked and crumbled, for garnish

Method
 

Preparation
  1. In a large pot, melt butter over medium heat, then sauté chopped onion, celery, and minced garlic until softened, about 5-7 minutes.
  2. Stir in flour and cook for one minute to create a roux, then gradually whisk in the chicken or vegetable broth until smooth.
  3. Add the diced russet, Yukon Gold, and red potatoes to the pot, bring to a boil, then reduce heat and simmer until potatoes are fork-tender, about 15-20 minutes.
  4. Lightly mash some of the potatoes in the pot with a potato masher or fork to thicken the soup, leaving some chunks for texture.
  5. Stir in milk and heavy cream, heating gently until warmed through, then season with salt and black pepper to taste.
  6. Serve the soup hot, garnished with fresh chives, shredded cheddar cheese, and crumbled bacon for extra flavor.
