Preparation
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- Pat the cod fillets dry with paper towels and season them with salt, pepper, and garlic powder on both sides.
- In a small microwave-safe bowl, melt the butter and then stir in the fresh lemon juice and chopped parsley.
Baking
- Place the seasoned cod fillets into the prepared baking dish and pour the lemon butter mixture evenly over each fillet.
- Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork.
Serving
- Serve the tender baked cod immediately, optionally garnished with extra fresh parsley or lemon wedges.
Notes
Ensure not to overcook the cod, as it can dry out quickly. For best results, use fresh cod. You can serve this with a side of roasted vegetables or rice.
