Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Peel and cut sweet potatoes into 1-inch cubes, then boil them in a large pot of salted water until very tender, which takes about 15-20 minutes.
Sweet Potato Base
- Drain the cooked sweet potatoes and mash them thoroughly in a large bowl.
- Add melted butter, granulated sugar, milk, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes, then mix until smooth and creamy.
- Spread the sweet potato mixture evenly into the prepared baking dish.
Pecan Streusel Topping
- In a medium bowl, combine flour, brown sugar, and chopped pecans.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the streusel topping evenly over the sweet potato mixture.
Baking
- Bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
- Let the casserole cool for a few minutes before serving.
Notes
For extra flavor, you can add a pinch of ground cloves or ginger to the sweet potato mixture. To make ahead, prepare the casserole up to the point of baking, cover, and refrigerate. Bake when ready, adding an extra 10-15 minutes to the baking time if starting from cold.
