Preparation
- Select disease-free seed potatoes, cutting larger ones into pieces with 2-3 eyes each and allowing them to cure for a few days to prevent rot.
Planting
- Choose a sunny spot with well-draining soil, enrich it with compost and bone meal, then plant seed potato pieces 4-6 inches deep and 12 inches apart in rows.
Hilling and Watering
- As plants grow, mound soil around them (hilling) to cover stems and developing tubers, and ensure consistent watering, especially during flowering.
Harvesting
- Harvest "new" potatoes after flowers bloom by carefully digging near plants, or wait until foliage dies back for mature potatoes, then cure them in a cool, dark place.
Notes
Rotate crops annually to prevent disease, and consider using straw or mulch around plants to retain moisture and suppress weeds.
